I told you guys I had more meal preps up my sleeve! This chicken caesar salad wrap is so good (even though in my wrap today I am missing the Caesar because I accidentally grabbed the Ranch instead). The finished product is up above, with my Italian dressing substitute. It was still good though! This took me about 40 minutes to make, with the bake time added. This is totally a meal prep you can make when you have no time and need to multi-task. I made 4 nights of meals with the recipe I will give you below.
- 3 chicken breasts
- 1 tomato
- 1 head of Romaine lettuce
- parmesan cheese
- Caesar dressing
- Wheat tortilla (or whatever tortilla you would like, I use wheat)
- A tad of olive oil
That’s it! That is all you need for this easy meal prep! So all I did was bake the chicken. I baked it at 200° Celcius, but I don’t know how long because I can just look at the chicken and tell when it is cooked after cooking it so often. I also use a thermometer if I am unsure, just make sure when you stick the thermometer in, to stick it in the middle and it’s 160°. At 160° chicken is done.
While I cooked the chicken, I started to chop up the lettuce and tomatoes.
After the chicken finished I let it cool down a bit while I washed dishes. I chopped up the chicken into half-inch cubes and viola! I was done.
All I have to do is add the parmeson and the Caesar when I pull it out. I split it up into 4 for the rest of the week and it should make two smaller wraps each! I am very excited about the rest of this week’s dinner because it is so good! I had one tonight, and cannot wait to try it with the Caesar dressing!
