Chicken & Broccoli Teriyaki Bowls

I don’t know if you all know, but I am obsessed with chicken and broccoli teriyaki. It is Mike’s favorite dinner that I make, and it has to be mine too. It is just so good! It doesn’t take very much to make either. I like to do simple dinners that way we can spend more time together at night. Have to make the most of all the time we have together!

Anyway, this meal prep makes enough for 4 bowls.

I start off with 1 pound of chicken breasts. I cut them into one-inch cubes, and I toss them in a skillet with a clove of garlic, diced, and a little bit of olive oil. While that is cooking, I chop up my two heads of broccoli and throw them in a pot with a little bit of salt, pepper, and water to steam them. Then I start the rice. I bring enough water for 2 cups of brown rice to a boil. When the water starts boiling I throw in the rice and allow that to continue to boil. By then the broccoli is done and I set that aside.

It’s time to mix the sauce ingredients! I put 1/4 cup of soy sauce, 1 tablespoon of cornstarch, 2 tablespoons of rice vinegar, and 2 tablespoons of honey (I substitute honey for sugar because it is healthier) and whish it all together. When the chicken is no longer pink, I add the sauce to it and stir it around until it thickens. By the time all of that is finished the rice is ready to be turned down. I let the rice simmer until the water is gone, and the rice is fluffy.

Time to separate into the containers and throw into the fridge until it is time to eat!

I meal prepped for about 3 hours today and this is what my fridge currently looks like! All ready for the week!
